
SOOOOO....I put up this very heavy, three-part post about the time I nearly die.....and then I just LEAVE it there for days and days. That's not depressing, right? :)
My life is all pumpkin right now: curried pumpkin soup, pumpkin cobbler, carving pumpkins, hanging pumpkins, folding laundry. Wait--maybe that last one wasn't pumpkin related. But seriously, it's almost midnight and I have two hours of laundry folding ahead of me. I rented The Proposal to watch to entertain me. Sometimes I'm just so stinking busy helping everyone else that I neglect my household chores. I'm thinking that might not be such a bad thing...though I'm sure Oprah would have some choice things to say about me and my semi-co-dependent ways.
Moving on.....
Here's a recipe sure to make you happy...maybe not your skinny jeans so much, but it's time they shut up for a while anyway. I made this cobbler over the weekend and it was happily devoured by everyone who came to visit (which is why there are no pictures...cause it's gone daddy gone).
PUMPKIN COBBLER
1 can easy Pumpkin Pie mix
2 eggs
1/2 can of evaporated milk
1 tsp. cinnamon
Mix all that junk together till it's smooth. Dump it into an ungreased 9x13 pan. Pour a yellow cake mix over the pumpkin goo (don't mix it up, just dump the powder), top that with a stick of butter cut into cubes (yes...the whole stick. Why else do you think it's so good?!). Put the whole thing in a 325 degree oven for 45 minutes. Serve it hot with a big pile of whipped cream on the top. Then demand people take it away from you before you eat the whole thing yourself, because you will surely be tempted to.

My motto is "As long as the laundry is clean, who CARES if it's folded!" I'm in the same boat at you with the laundry!! Our laundry is usually clean but there is ALWAYS at least 4 loads of laundry to be folded!! (and that doesn't include what's dry in the dryer!)
I figure as long as my kids have clean laundry to wear I'm doing good! Besides when I do get it all folded, it's not like it all fits in their drawers any ways! (Thank GOD for hand-me-downs!!)
Is it fitting that the song, "I just want to be okay" comes on when I open your blog page? I think you are okay and that you are doing a smash up job! Pumpkin pie!?!?!? UMMMMMM! Clean laundry....especially warm right out of the dryer...tops! If you can feel half of all the smiles you give people when we read your posts, you would know that you are going to be just fine. We all are pulling for you and the boys, Jen! And I like the music almost as much as the tales and poetry (when you grace us with it). Have a great day, you deserve it!

And I really love pumpkin cobbler. Although I think it's better COLD, for breakfast the second day. Next time don't invite so many people over so there will be left overs :)
I played my very first game of Bunko the other night and won the Proposal. Hilarious show. My problem isn't folding my laundry, it's getting everyone to put it away. We all have piles and piles (folded of course) on the back of the couch. I'm thinking of turning the couch into one giant dresser. Think it'll work?
I have a similar recipe....and it is divine. We put half of the cake mix on the bottom and half on top. And then we call it pumpkin pudding cake. Yummy!
i'm gonna have to try that one....i lOVE cobbler and the fact that it's pumpkin sounds reather intruging....mayber perhaps for saturday night and my parents....yum!!!!

Hey! My wife has NEVER done the laundry. Not once. (since we've been married, anyway -- she did do hers when she was single, of course).
I work a 4 day week, so I do it on Fridays when she's at work, so then we don't have to worry about it on Saturdays and can have the whole day together. :-P
I will be trying that recipe this weekend! I love the easy and delicious factor. And I love your blog! I just discovered you -- but can relate in some pretty big ways. And to top it all off, my 4 year old heard that opening song (Be OK) and started dancing -- then singing and my "oh my gosh could I be more behind on EVERYTHING?!?" day -- is improving. Thank you. :)
