I wonder what person first looked at asparagus and thought: "hey--I wonder if I can eat this". (And I REALLY wonder about the guy who dug up the first potato and decided to stick it in his mouth.....)
Anyway, I'm glad someone tried it and gave it the thumbs up, because I LOVE IT!
It use to grow wild behind our house in the country. Some years I would even beat the "unknown, early-morning asparagus robbers" who usually pilfered all of it--- and get some for myself!
The Germans would eat white asparagus ("spago") --picked before it came out of the ground. It was really tender, but didn't have nearly as much flavor. I suppose that was alright since they always drowned it in a vat of butter and served it with schnitzel anyway :) .......
Here's what I made with my bunch of fresh asparagus tonight:
ASPARAGUS AND PROSCIUTTO PIZZA
2 T. olive oil
1 pound store-bought pizza dough (or go to your favorite pizza place and see if they'll sell you a pound)
1 1/4 cups ricotta cheese
1/2 cup grated parmesan
Salt and pepper
1 pound thin asparagus, trimmed and halved
6 ounces (2 cups) grated gruyere
3 ounces thinly sliced prosciutto, cut into strips.
*Preheat oven to 425 degrees. Brush a baking sheet with olive oil. Place the pizza dough on the pan and stretch to fit. Spread the ricotta on the dough. Sprinkle the parmesan on top and season with salt and pepper. Nestle the asparagus pieces in the cheese and sprinkle the gruyere on top (I like to get as much on the outer rim of the crust as I can).
*Bake until the crust is brown and cheese is bubbling---about 20-25 minutes. Scatter the prosciutto over the top and cut into squares.
And see---it looks totally yum-o even sitting on my nasty old cookie sheet :)!
For Debbie: I'm sure you'll have to strain your poor eyes to see this---but here is asparagus growing wild :)

MMMmmm....I love asparagus. Now, if I could just get my kids to jump on the band wagon. For some reason that pizza reminds me of the pizza you made me once for lunch. (I think is was some garlic alfredo veggie frozen thing. And it was DIVINE!!) Makes my mouth water.

Prosciutto...isn't that just the fanciest term for a food you've ever heard? Well, maybe there are other fancy sounding foods out there...but I really like prosciutto. I've never used it, but I would love to just tell someone, "and then you top it with prosciutto". Don't I sound food savvy?

I love asparagus and as a matter of fact, my husband I were just wondering how it grew. YOu wouldn't happen to have any pics of that would you??? And that pizza is right up my alley! Looks really good.
We love asparagus!! We also grow it, but it's past season here. :o( My favorite way to make it is to coat it in olive oil and put it in my grill basket. Grill for about 7 minutes or until it turns bright green and darkens around the edges. Make sure you salt it too....yummo!

Yum! But.... is American asparagus in the can like Australian asparagus in the can? All mushy and funny tasting? I love fresh stuff, just blanched with some salt, or in salads etc. But the canned stuff leaves me pale.

I'm not sure if you knew Gray had already had the surgery-couldn't tell if you knew that from your comment or were wishing us well, but it went well and he's healing up good. (: The hardest part is trying to keep him from rubbing it all the time. Hardest thing ever to have someone take your kid from you, but so worth it. He's a good one.
Now I'm so curious about newboots too since he's from our side of the woods. I've been thinking about anyone I know who served in B's mission, but I'm pulling a blank. Now that he's moving you should post a goodbye picture of him so we won't be left wondering! (: I'll keep working my brain, though!

I have been wanting some grilled asparagus and just bought some yesterday morning. Can't wait for Hubby to grill it.
