Thanksgiving will be at my house again this year. With Brad's family we always have a very traditional dinner (and as they're potato farmers, there are always MOUNDS of potatoes!). But I love to play with variations on originals. So I'm doing a salty, sweet, spicy, sour menu with a lot of herb, spice, and citrus infusions. We'll only have 8 adults and our own 4 kids, so I won't be cooking for an army or anything. Anyway, as I was double checking all my recipes this evening, I thought I'd share my favorite appetizer recipe. No sour in this one, but it is salty, spicy and sweet--YUM-O!
BACON WRAPPED CHESTNUTS:
-1 can of WHOLE water chestnuts
-Soy sauce
-about 1 cup brown sugar
-1 package sliced pepper bacon, each strip cut in 1/2
(pancetta could work too, but I like old fashioned breakfast bacon)
-Toothpicks (soaked for 20 minutes in water)
Marinate chestnuts in soy sauce 30 minutes or up to overnight. Roll each one in brown sugar until entirely coated. Wrap with bacon and secure with a toothpick. Put them on a broiler pan (I wrap the bottom of the pan with foil--the grease can get messy). After they're all on, give them one more light sprinkle of brown sugar, and one more of black pepper. Bake at 400 degrees for 20 minutes. Serve fresh out of the oven.
I only make these at Thanksgiving and New Years, then diet them off the rest of the year :).
TODAY I'm thankful for a modern kitchen with all the little gadgets from cookie scoops to hot chocolate makers, and of course the MICROWAVE--that make my life so much easier.

Mmm...yummy! I remember you making those for us once. I can't remember if it was for New Year's or what though. And do you know what else I thought about today? Going to see Harry Conick Jr. (That was you guys we went with right?) Anyway, SO much fun!!
Oooooh! I LOVE recipes! I seriously have an addiction to recipes so thanks for sharing. Now if only I had the patience to cook them all :-)
That was a blast! He was here again a few months back but the finances didn't coordinate with the concert date--oh well.
Elena--you guys will be getting a gift in the mail about Nov. 25--you can wait till Christmas or open it right away if you want. Just saw something we thought ya'al would like!
That sounds yummy. You are quite the gourmet chef! (: I don't usually get out of my comfort zone in cooking, but will have to try to more often. We eat so clean most of the time that I don't usually have any strange ingredients that the fun recipes call for! I need to start stocking up in the pantry! I love this time of year!
These are yummy! I've had them at parties but never made them myself. Do your kiddos eat them as well? They sound delectable.

Oh boy a gift! I love surprises. Thanks in advance! (You know how good I am at writing thank you cards.) Can't wait to see what it is.
My kids DO eat them--surprisingly! I think all they see is bacon and don't really know what's inside it. I can make them eat just about anything if I hide it in something I know they do like (carrot wrapped in a miniature Snickers bar, anyone?).
